I have always been a fan that is pancake. There is no breakfast food than pancakes, can we agree on that? Okay, good! It seems as if you can take around the world and it seems that now will be a fantastic day when you begin with sandwiches. It's correct, is not it? My typical breakfast pancakes are such Power Oat Pancakes, which I LOVE! They're delicious and healthy. But as the seasons change, so do I. So I am saying goodbye to my good ol trusty Power Oat Pancakes and moving on to newer things, such as this Fluffy Pumpkin Pancakes.

Ingredients
  • 1 Cup Flour wholewheat/oat are good healthy alternatives.
  • 2 Tbsp Sugar/sweetener
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 1/2 tsp Vinegar
  • 1 Egg or flax egg
  • 1 Cup Milk/Almond Milk
  • 1 Tbsp Coconut Oil
  • 1 Cup Pumpkin Puree
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/8 tsp Ground Cloves
  • 1/2 tsp All Spice
OPTIONAL TOPPING:
  • Salted Caramel
  • Coconut Whipped Cream
Directions
  1. Make the Pumpkin Puree if using homemade puree.
  2. Then combine the pumpkin puree with the rest of the wet ingredients in one bowl.
  3. Combine all of the dry ingredients in another bowl.
  4. Mix all the dry and wet ingredients together until well blended.
  5. Fry in a pan with a little additional coconut oil or butter on low (be patient).
  6. Shirt with a little butter and syrup/maple syrup or with salted caramel.
