This 1 pot Slow Cooker Seasoned Chicken, Potatoes and Green beans includes a homemade dressing/marinade and will be your new favourite healthier dinner.
It's been too long since I have made a healthy slow cooker meal, I made Slow Cooker Seasoned Chicken, Potatoes and Green Beans this past weekend.
I have seen oven versions of the recipe, but most include an Italian dressing seasoning package. Rather than using a packet the sauce in this dish, I create a combination of olive oil, lemon juice, garlic, and dried seasonings. That recipe has the exact same notion as this one but much less healthy, if you love this meal you will need to see my Butter Chicken and Veggies.
Can I use lemon juice from a squeeze bottle?
No. This recipe is not place or the time to use squeeze bottle lemon juice; in case it is used by you, the recipe will taste off. Lemons are cheap, make certain to grab them.
Can I use the Italian dressing mix rather than making the homemade dressing?
Yes! You can forgo all of the dressing ingredients and drizzle a cup of butter beans and potatoes scatter over an Italian dressing mix. Follow the cooking instructions below.
You may get the Italian dressing mix on the salad dressing aisle beside the ranch dressing packets.
Homemade dressing ingredients:
- ⅓ cup FRESH lemon juice (1 large or 2 small lemons)
- ¼ cup olive oil
- 1 tsp. dried oregano
- 1 tsp. salt
- ¼ tsp. pepper
- ¼ tsp. onion powder
- 2 garlic cloves minced
Instructions
- Start by putting the chicken at a 6-quart slow cooker, in the middle. Add the green beans. For the potatoes, you'll have to mound off high them .
- In a skillet, whisk together the lemon juice, olive oil, oregano, pepper, salt, onion powder, and garlic cloves.
- Pour this mixture evenly over the chicken, green beans and potatoes.
- Cover and cook on HIGH for 4 hours or LOW for 7 hours, without opening the lid during the cooking time.
Note- Do NOT use lemon juice from squeeze bottle, the recipe won't turn out correct.
