Warm, thick healthy Raspberry Oatmeal Bars – All you need are 6 simple ingredients and 35 minutes to make this recipe. Enjoy as a healthy dessert or on-the-go snack!

- 2 1/2 cup old fashion oats (use GF if needed)
- 1 cup almond flour
- 1/2 cup honey
- 2 tbsp creamy peanut butter
- 1/2 cup coconut oil melted
- 1 cup raspberry jam
- 1 pinch of salt

Bake crust . To bake bars, and prevent your oatmeal squares from falling apart - bake crust first until you layer jam and crumble topping.
Use peanut butter rather than eggs. Since there are no eggs in this recipe, peanut butter is the binding component. It texture is fantastic for holding ingredients - I love the peanut butter flavor that is additional.

- Preheat oven to 350F.
- In blender or a food processor chop oats until they are course and in pieces.
- In a mixing bowl add oats & peanut butter, coconut oil, honey, and almond milk. The mix should be crumble-like and oily texture.
- Line an 8x8 square pan with parchment paper. Put aside of mixture for the topping, and pour remainder of oat mixture. Press mixture with the edges, in addition to your fingers. Make sure mixture is patted. Prick with fork to allow steam to come through the base of the pain (this prevents any unnecessary climbing of the crust). Bake uncovered for 10 minutes in oven.
- Let crust cool. Jam around the top and spread evenly. Use oat mixture that was put to crumble on top. Bake in oven until edges of the crust are golden brown. Let bars cool for 10 minutes before cutting. Pull parchment paper borders to carefully and successfully lift out bars. Cut and serve! Store in a sealed container in refrigerator.
