If you are in the Ohio area, you are probably already familiar with the candy called"buckeyes;" nevertheless, for those of you outside the midwest, this sweet treat is peanut butter balls coated in chocolate. It is sort of like a bite sized REESE'S Peanut Butter Cup. Before I insist that you whip up this recipe for buckeye and stop whatever you are doing if you have never experienced a buckeye brownie cookies. Buckeyes are taken by it . Seriously, this is something that you will need to try... and what better time than around the holidays, right?

This recipe for brownie cookies that are buckeye is like a science experiment gone horribly. It fuses buckeyes (peanut butter and chocolate) with brownies and cookies for a decadent, melt-in-your-mouth experience. Trust me, after the first bite you will be asking these brownie cookies that are buckeye where they have been all your life!
INGREDIENTS
  • 1 teaspoon vanilla extract
  • 3/4 cup powdered sugar
  • 1 cup creamy peanut butter
  • 4 oz. Chocolate Candiquik or your favorite chocolate
  • One fudge brownie mix
  • 1/4 cup melted butter
  • 4 oz. cream cheese
  • 1 large egg
DIRECTIONS
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine brownie mix, egg, melted butter, and cream cheese.
  3. Employing a 1 tbsp cookie dough scooper, scoop out dough and place on baking sheet.
  4. Note: Your buckeye brownie cookie dough should be sticky.
  5. Bake for 12 minutes.
  6. While biscuits are baking, mix together peanut butter, powdered sugar, and vanilla extract.
  7. Using your hands, roll peanut butter mixture into small balls and set aside on a sheet of parchment paper.
  8. Remove cookies from the oven, and immediately press a peanut butter ball into the middle of each cookie.
  9. Let the cookies set for about ten minutes.
  10. Add chocolate into a small microwave-safe bowl and microwave on 50% heat for 90 seconds.
  11. Stir chocolate and continue heating until chocolate has completely melted, stirring every 15 minutes.
  12. Use a teaspoon to scoop melted chocolate onto each cookie (overtop of the peanut butter ball) and allow simmer for around thirty minutes.
